Roasted Baby Red Potatoes
One pound of Baby Red Potatoes
Two tablespoons of Extra Virgin Olive Oil
One Tablespoon of Pepper
One Tablespoon of Salt
Two Tablespoons of Garlic Powder
Four Tablespoons of Flour
Two Tablespoons of Onion Powder
Directions
1. To begin, preheat your oven to 425 degrees.
2. Cut the potatoes in half, leaving the skin on, and put the potatoes on a cookie sheet.
3. Cover the potatoes in the ingredients and gently toss.
4. Cook your potatoes for thirty minutes or until done, a fork will be able to be pushed through them when they are finish.
This is one of the easiest baby red potato recipes to make. It is a snap prepare and the actual cooking only takes thirty minutes. This recipe serves four. Ingredients can be adjusted for a varying number of people.
Baby Red Potato Salad
Four cups of baby red potatoes, chopped into small pieces
One fourth of a cup of finely diced red onion
One half of a cup of finely diced bell pepper
1 Tablespoon of Red Wine Vinegar
1 Tablespoon of Extra Virgin Olive Oil
1 Tablespoon of mayonnaise
1 Teaspoon of Dijon Mustard
3 Diced Scallions

Place the potatoes in salted water and boil them for ten minutes. Drain the potatoes, making sure they cool.
Directions
As you boil the potatoes, place the mustard, green peppers, vinegar, red onion, and mayonnaise, seasoning with pepper and salt. Mix these ingredients, allowing the flavors to marinade as the potatoes cook. When the potatoes have finished cooking and have cooled, mix everything in a bowl and add the scallions.
Mix well and let the flavors marinade while the potatoes cook. Once the potatoes are done and cool, mix into the bowl and add scallions and additional salt and pepper to taste. Serve room temperature or refrigerate until ready to serve.

Sautéed Baby Red Potatoes
Two pounds of small baby red potatoes with the skin on
One quarter cut of sliced green onions
One quarter tablespoon of pepper
One half tablespoon of salt
Two Tablespoons of Butter
Directions
With the use of a peeler, take away a strip from a middle of each of the potatoes, setting them aside.
Over a medium to high heat, place butter in a skillet until it melts. Add your potatoes, pepper, and salt, and stir to cover your potatoes. Place a cover over the skillet and let the potatoes cook for ten minutes. Every time three minutes passes, holding down the lid on the skillet, swirl it around using circular motions to make the potatoes move in the skillet.
Once this is finished, turn your heat to high and continue cooking the potatoes, swirling every three minutes. The potatoes should be brown and tender after another ten minutes, after which you can add the green onion, swirling the skillet again. Cook for an additional minute. Place the rest of the onions on the dish while serving.
